This is the moment—September behind us, October in full swing—when the air turns crisp, the colors grow warmer, and the senses work to make sense of a swirl of signals still suspended between summer’s vibrant energy and winter’s regal stillness.
That’s the feeling we’ve tried to capture in each of the new dishes we’ve created for you. We started from the foundations we’ll never abandon: outstanding raw materials, a focus on micro-producers, and a culinary approach that puts ingredient recognition at the center—without giving up the element of surprise.
Chef Ermanno—by now, you’ve come to know him—works with a clear vision: to craft combinations of textures and flavors that engage without ever overwhelming. Each dish is born from a balance: between intensity and delicacy, between technique and instinct, between respect for the ingredient and the desire to amaze.
The result is a menu that evolves with nature’s rhythm, remaining true to a philosophy of clean, elegant, contemporary cuisine deeply rooted in the land.
Among the new arrivals, first up is the Torta Della Locanda cake, now offered in a special limited edition with fresh figs. Served with Madagascar vanilla gelato, it’s a dessert that smells like home—but surprises with its depth and harmony. Available only while supplies last.

And what about the extraordinary colors of the Mediterranean-style Red Mullet, served with carrot cream and mountain oregano? It’s the perfect way to dive joyfully into autumn—a journey between sea and highlands, between sweetness and aromatic flair.
Just as the Rainbow Trout fillet, served with its roe, sautéed mushrooms, and fondant potato, tells the story of autumn in the woods and streams, with a delicacy that wins you over from the very first bite.
Alongside the seasonal novelties, two offerings remain ever-present—now signature staples of the Locanda: the grill of selected meats, featuring prized cuts like “Oro Veneto,” “Red Krowa,” and Finnish Sashi, and a refined selection of raw seafood, curated daily based on availability and freshness of the catch.
